Ingredients

  • 2 envelope inflavored gelatin
  • 2 cup watermelon juice
  • 1 1/2 cup white grape fruit juice
  • 1 tbsp Shredded lemon peel
  • 1 1/2 cup assorted chopped fruit
  • 1 cup Shredded Feta cheese
  • 2 mint leaves

Method

  • in a sauce pan sprinkle gelatin over watermelon juice & let stand for 5 mins.
  • cook & stir til dissolved .
  • stir in grape juice & lemon peel
  • add half the watermelon juice to the 2 qt square baking dish .. add fruit & cover .
  • frig it for 1 1/2hrs
  • once kinda firm add remaining juice .. (you keep other half @ room temp).
  • then frig all ..cover .. serve 5 hrs later for best results
  • cut into squares & add feta cheese on top& serve.
