Ingredients
- rind from 1 watermelon
- 4 Tbsp. coarse salt
- 3 qt. water (enough to cover rinds)
- 1 qt. white vinegar
- 1 qt. water
- 5 lb. sugar
- 4 or 5 cinnamon sticks
- 1 lemon, thinly sliced
Method
- Peel rind and remove all pink.
- Cut in 1-inch squares.
- Soak 3 hours in salt and water.
- Rinse and drain and cook in enough water to cover until just tender.
- Make syrup of sugar, vinegar, water, lemon and cinnamon.
- Add rind and simmer until it looks clear. Pack in hot, sterile jars and seal.
- Makes 6 to 8 quarts.
