Ingredients

  • rind from 1 watermelon
  • 4 Tbsp. coarse salt
  • 3 qt. water (enough to cover rinds)
  • 1 qt. white vinegar
  • 1 qt. water
  • 5 lb. sugar
  • 4 or 5 cinnamon sticks
  • 1 lemon, thinly sliced

Method

  • Peel rind and remove all pink.
  • Cut in 1-inch squares.
  • Soak 3 hours in salt and water.
  • Rinse and drain and cook in enough water to cover until just tender.
  • Make syrup of sugar, vinegar, water, lemon and cinnamon.
  • Add rind and simmer until it looks clear. Pack in hot, sterile jars and seal.
  • Makes 6 to 8 quarts.
