Ingredients

  • 2 cans sliced beets
  • 3 cloves garlic, minced
  • 1 Tbsp. margarine
  • 1/2 medium green pepper, diced
  • 1/2 medium red pepper, diced
  • 1/2 medium cucumber, peeled, seeded and diced
  • 1/2 c. onion, chopped
  • 1/4 c. olive oil
  • 2 Tbsp. lemon juice
  • 2 Tbsp. white wine vinegar
  • 1 Tbsp. capers, coarsely chopped
  • 1 tsp. Dijon style mustard
  • salt and pepper to taste

Method

  • In a saucepan, melt margarine.
  • Add peppers, cucumber and onion.
  • Cook until tender, about 5 minutes.
  • Add remaining ingredients and mix well.
  • Arrange beets on 4 individual plates and drizzle with vegetable mixture.
  • Serve warm.
  • Serves 4.
