- 2 cans sliced beets
- 3 cloves garlic, minced
- 1 Tbsp. margarine
- 1/2 medium green pepper, diced
- 1/2 medium red pepper, diced
- 1/2 medium cucumber, peeled, seeded and diced
- 1/2 c. onion, chopped
- 1/4 c. olive oil
- 2 Tbsp. lemon juice
- 2 Tbsp. white wine vinegar
- 1 Tbsp. capers, coarsely chopped
- 1 tsp. Dijon style mustard
- salt and pepper to taste
Method
- In a saucepan, melt margarine.
- Add peppers, cucumber and onion.
- Cook until tender, about 5 minutes.
- Add remaining ingredients and mix well.
- Arrange beets on 4 individual plates and drizzle with vegetable mixture.
- Serve warm.
- Serves 4.
