- 1 pkg. broth (chicken, beef or ham; saved)
- 1 c. chopped onion
- 1 c. chopped celery
- 1/2 c. chopped green pepper
- 1 clove crushed garlic
- 2 Tbsp. Italian seasoning
- 1 c. meat (chicken, beef or ham)
- 1 c. sliced carrot
- 1 (8 oz.) can whole tomatoes
- 1 (8 oz.) can stewed tomatoes
- 1 (8 oz.) can whole kernel corn
- 1 (8 oz.) can sliced okra
- 1 c. of uncooked rice or 1/2 lb. egg noodles or 2 c. diced potatoes
- salt and pepper to taste
Method
- Cook and dice meat.
- Save broth.
- Saute onions, celery, green peppers and garlic in olive or vegetable oil; add remaining ingredients.
- Add choice of rice, pasta or potato.
- Add salt and pepper.
