Ingredients

  • 1 pkg. broth (chicken, beef or ham; saved)
  • 1 c. chopped onion
  • 1 c. chopped celery
  • 1/2 c. chopped green pepper
  • 1 clove crushed garlic
  • 2 Tbsp. Italian seasoning
  • 1 c. meat (chicken, beef or ham)
  • 1 c. sliced carrot
  • 1 (8 oz.) can whole tomatoes
  • 1 (8 oz.) can stewed tomatoes
  • 1 (8 oz.) can whole kernel corn
  • 1 (8 oz.) can sliced okra
  • 1 c. of uncooked rice or 1/2 lb. egg noodles or 2 c. diced potatoes
  • salt and pepper to taste

Method

  • Cook and dice meat.
  • Save broth.
  • Saute onions, celery, green peppers and garlic in olive or vegetable oil; add remaining ingredients.
  • Add choice of rice, pasta or potato.
  • Add salt and pepper.
