Ingredients

  • 1 lb. red beans
  • 1/4 lb. salt pork
  • 1 1/2 c. chopped onion
  • 1/2 c. chopped green onion
  • 1/2 c. chopped parsley
  • 1/2 Tbsp. garlic salt
  • 1/2 tsp. oregano
  • 1/2 tsp. red pepper
  • 1/2 Tbsp. Worcestershire
  • 1/2 tsp. pepper
  • 3/4 tsp. hot sauce
  • 8 oz. can tomato sauce
  • 1 lb. smoked sausage, cut up

Method

  • Sort and wash beans; cover with water 2-inches over beans and soak overnight.
  • Add salt pork to beans; cover and simmer for 45 minutes.
  • Stir in next 10 ingredients and cook for 1 hour.
  • Brown sausage; drain and add to beans.
  • Cover and simmer 45 minutes. Serve over rice.
