- 1 lb. red beans
- 1/4 lb. salt pork
- 1 1/2 c. chopped onion
- 1/2 c. chopped green onion
- 1/2 c. chopped parsley
- 1/2 Tbsp. garlic salt
- 1/2 tsp. oregano
- 1/2 tsp. red pepper
- 1/2 Tbsp. Worcestershire
- 1/2 tsp. pepper
- 3/4 tsp. hot sauce
- 8 oz. can tomato sauce
- 1 lb. smoked sausage, cut up
Method
- Sort and wash beans; cover with water 2-inches over beans and soak overnight.
- Add salt pork to beans; cover and simmer for 45 minutes.
- Stir in next 10 ingredients and cook for 1 hour.
- Brown sausage; drain and add to beans.
- Cover and simmer 45 minutes. Serve over rice.
