Ingredients
- 2 lb. chicken breasts
- seasoned flour
- 1/3 c. shortening
- 1 can chicken gravy
- 1/2 c. pineapple chunks
- 1/4 tsp. ginger
- 1 small can Mandarin oranges
- 2 c. instant rice, cooked in 2 c. water
Method
- Coat chicken pieces with flour.
- Brown in shortening.
- Pour on gravy and pineapple chunks.
- Stir in ginger, cover and simmer at 220° on top of the stove for 25 minutes.
- Add oranges.
- Simmer 5 minutes more.
- Serve with hot cooked rice.
