Ingredients

  • 1/2 c. brown sugar, divided
  • 2/3 c. orange juice, divided
  • 2 lb. can sweet potatoes, drained
  • 1 tsp. salt
  • 1/4 tsp. cloves
  • 1/3 c. melted margarine
  • 1 tsp. cinnamon
  • 1 c. chopped pecans

Method

  • Combine 1/4 cup brown sugar, 2 teaspoons orange juice and 2 teaspoons butter.
  • Mix and set aside for use in glaze.
  • Whip the potatoes until smooth. Beat in eggs. Add salt, cloves and cinnamon.
  • Mix well. Add remaining sugar, orange juice and butter. Pour into a 1 1/2-quart casserole dish.
  • Sprinkle pecans on top. Pour glaze over pecans. Bake at 350° for 40 minutes. Serves 10.
