Ingredients
- 1/2 c. brown sugar, divided
- 2/3 c. orange juice, divided
- 2 lb. can sweet potatoes, drained
- 1 tsp. salt
- 1/4 tsp. cloves
- 1/3 c. melted margarine
- 1 tsp. cinnamon
- 1 c. chopped pecans
Method
- Combine 1/4 cup brown sugar, 2 teaspoons orange juice and 2 teaspoons butter.
- Mix and set aside for use in glaze.
- Whip the potatoes until smooth. Beat in eggs. Add salt, cloves and cinnamon.
- Mix well. Add remaining sugar, orange juice and butter. Pour into a 1 1/2-quart casserole dish.
- Sprinkle pecans on top. Pour glaze over pecans. Bake at 350° for 40 minutes. Serves 10.
