Ingredients

  • 6 Tbsp. olive oil
  • 1 1/2 c. zucchini, cubed
  • 1 c. chopped onion
  • 2 cloves garlic, crushed
  • 1 green pepper, cubed
  • 2 c. crushed tomatoes
  • 1 Tbsp. chili powder
  • 1 1/2 tsp. cumin
  • 1 1/2 tsp. oregano
  • 1/4 c. chopped parsley
  • salt and pepper to taste
  • 2 cans kidney beans, drained
  • low-fat sour cream and Cheddar cheese (garnish)

Method

  • Heat oil in large skillet.
  • Add onions, green pepper and garlic.
  • Saute 10 minutes until soft.
  • Transfer to saucepan.
  • Add tomatoes and rest of seasoning.
  • Cook about 10 minutes.
  • Garnish, if desired.
