Ingredients
- 3 pt. beef stock
- 1/2 c. sliced carrots
- 1/2 c. diced turnips
- 1/2 c. shredded string beans
- 1 small onion, diced
- 1/2 c. green peas
- 2 c. tomatoes (canned or stewed)
- 1 c. diced potato
- salt and pepper to taste
Method
- Cut carrots in thin slices, turnips in small dice and shred beans thinly.
- Add all vegetables to stock; gently simmer until vegetables are tender, adding hot water if soup becomes too thick. Season with salt and pepper to taste.
- Serve with crisp crackers or croutons.
