- 12 medium onions, ground (4 c.)
- 1 medium cabbage, ground (4 c.)
- 12 green tomatoes, ground (4 c.)
- 12 sweet peppers
- 2 sweet red peppers
- 1/2 c. salt
- 6 c. sugar
- 2 Tbsp. mustard seed
- 1 Tbsp. celery seed
- 1 1/2 Tbsp. turmeric
- 4 c. cider vinegar
- 2 c. water
Method
- Grind vegetables using coarse blade.
- Sprinkle with salt; let stand overnight.
- Rinse and drain.
- Combine remaining ingredients. Pour over vegetables.
- Heat to boiling.
- Simmer 3 minutes.
- Seal in hot sterilized jars.
- Makes 8 pints.
