Ingredients

  • 12 medium onions, ground (4 c.)
  • 1 medium cabbage, ground (4 c.)
  • 12 green tomatoes, ground (4 c.)
  • 12 sweet peppers
  • 2 sweet red peppers
  • 1/2 c. salt
  • 6 c. sugar
  • 2 Tbsp. mustard seed
  • 1 Tbsp. celery seed
  • 1 1/2 Tbsp. turmeric
  • 4 c. cider vinegar
  • 2 c. water

Method

  • Grind vegetables using coarse blade.
  • Sprinkle with salt; let stand overnight.
  • Rinse and drain.
  • Combine remaining ingredients. Pour over vegetables.
  • Heat to boiling.
  • Simmer 3 minutes.
  • Seal in hot sterilized jars.
  • Makes 8 pints.
