Ingredients

  • 1 lb. fresh mushrooms, sliced
  • 1 onion, sliced
  • 2 zucchini or yellow squash, sliced
  • 1 green pepper, sliced
  • 3 to 4 Tbsp. butter
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • dash of garlic salt
  • 1 (10-inch) pie shell
  • 1 tomato, sliced
  • 1 c. mayonnaise
  • 1 c. Mozzarella cheese, grated

Method

  • Bake pie shell at 325° for 20 minutes.
  • Saute vegetables in butter until crisp, but not soft.
  • Drain well and add seasonings. Place tomato slices in bottom of pie shell.
  • Add vegetables. Spread mayonnaise-cheese mixture over vegetables.
  • Bake, uncovered, at 325° for 45 minutes to 1 hour.
