- 1 lb. fresh mushrooms, sliced
- 1 onion, sliced
- 2 zucchini or yellow squash, sliced
- 1 green pepper, sliced
- 3 to 4 Tbsp. butter
- 1 tsp. salt
- 1/4 tsp. black pepper
- dash of garlic salt
- 1 (10-inch) pie shell
- 1 tomato, sliced
- 1 c. mayonnaise
- 1 c. Mozzarella cheese, grated
Method
- Bake pie shell at 325° for 20 minutes.
- Saute vegetables in butter until crisp, but not soft.
- Drain well and add seasonings. Place tomato slices in bottom of pie shell.
- Add vegetables. Spread mayonnaise-cheese mixture over vegetables.
- Bake, uncovered, at 325° for 45 minutes to 1 hour.
