Ingredients

  • 2 stalks fresh broccoli
  • 3 zucchini
  • 3 squash
  • 1 (8 ounce) container fresh mushrooms (I use Portobello)
  • 1 small red onion
  • 1 tablespoon coconut oil
  • 1 dash lawry's salt

Method

  • Wash your vegetables.
  • Slice Zucchini and Squash in fairly thin slices or to desired thickness.
  • Cut the tops off of your Broccoli and discard the rest.
  • Peel onion and cut and dice to preferred size.
  • Wash and slice fresh mushrooms (I usually throw out the stems).
  • In skillet, melt about 1 T. Coconut Oil and add your vegetables (the pan will be full but they will cook down some and shrink in size).
  • I then salt with Lawry's, I add more Lawry's than I normally would because that is how I like it, so use your own discretion.
  • Turn burner to low, cover and cook and stir until it has reached your preferred degree of tenderness.
  • I do not peel the Zucchini or Squash, just wash, slice and cook!
  • I love these veggies and many times I eat then as a main meal.
