Ingredients
- 1 large zucchini
- 1 medium yellow squash
- 1 large onion
- garlic (as much as you like)
Method
- Slice zucchini, squash and onion.
- Place in a skillet with enough olive oil to cover the bottom of the pan.
- Saute until almost tender.
- Add salt and pepper to taste.
- Dice 1 large fresh tomato and add to mixture, stirring until tender.
