Ingredients

  • 1 1/2 c. fresh green beans (can substitute canned)
  • 2 carrots, cut crosswise into halves, then into strips
  • 1 medium onion, cut into 1/4-inch slices
  • 3 c. sliced fresh mushrooms
  • 1/4 c. butter
  • 1 tsp. salt
  • 1/4 tsp. garlic salt
  • pepper to taste
  • lemon juice (optional)

Method

  • Hollow out 4 tomatoes and fill with:
  • 1 cup Cheddar cheese, 1 cup bread crumbs, minced onion, minced parsley, nutmeg and melted butter to moisten.
  • Sprinkle salt on top and put tops of tomatoes back on and bake in oven at 350° until done.
