Ingredients

  • 2 tbsp oil
  • 250 g tofu, cut into cubes
  • 2 None onions, peeled and finely diced
  • 2 cloves garlic, peeled and finely diced
  • 2 cm piece fresh root ginger, peeled and finely diced
  • 1 None red chilli, finely diced
  • 1/4 tsp ground cloves
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 500 g spinach

Method

  • Heat the oil in a frying pan and saute the tofu, turning, until browned, then remove and set on paper towels. To the hot pan, add the onions, garlic, ginger, chili and spices and cook for 5 mins. Add the spinach and 1/2 cup of water and cook until wilted. Season with salt, add the tofu and cook for 2 mins. Serve immediately.
