Ingredients

  • 600 g veal steaks
  • flour
  • salt
  • fresh ground pepper
  • 2 -3 tablespoons olive oil
  • 4 garlic cloves, thinly sliced
  • 12 cup flat leaf parsley, chopped
  • 12 cup red wine vinegar

Method

  • Beat out veal until of an even thickness.
  • Cut into neat similar sized pieces.
  • Lightly dust with seasoned flour, shaking off the excess.
  • Heat oil in pan and add veal.
  • Cook over high heat until golden brown all over.
  • You may need to do this in batches.
  • Add garlic and cook until lightly coloured.
  • Remove pan from heat and add parsley and vinegar.
  • Swirl around to make the sauce.
  • Serve with mashed potato and greens.
