Ingredients
- 3/4 c. yellow corn meal
- 1 c. flour
- 4 tsp. baking powder
- 3/4 tsp. salt
- 1/4 c. sugar
- 1 egg, well beaten
- 3 Tbsp. melted fat
- 12 strips bacon, cut in half crosswise
Method
- Mix and sift dry ingredients.
- Mix egg and milk and add.
- Stir in fat.
- Pour boiling water over the bacon; drain and dry. Arrange bacon strips in bottoms of 2 (8-inch) round cake pans. Pour half the batter into each.
- Bake in a hot oven (425°) for about 25 minutes.
