Ingredients
- 8 baking potatoes
- 1 pkg. Hidden Valley ranch dressing
- 1 c. grated Cheddar cheese
- 1/4 c. butter
Method
- Microwave potatoes for 22 to 24 minutes.
- Cool for 5 to 10 minutes.
- Slice a thin piece from top of each (discard) and carefully scoop out with a small spoon.
- Make ranch dressing according to directions on package.
- Mash potatoes with butter and enough ranch dressing
- so potato mixture is still firm.
- Mix in cheese.
- Carefully put back into potato skins (mixture will pile out over top of potato).
- You may freeze at this point, thaw and bake 30 minutes at 350° or bake right away for 20 to 30 minutes at 350°.
