Ingredients

  • 8 baking potatoes
  • 1 pkg. Hidden Valley ranch dressing
  • 1 c. grated Cheddar cheese
  • 1/4 c. butter

Method

  • Microwave potatoes for 22 to 24 minutes.
  • Cool for 5 to 10 minutes.
  • Slice a thin piece from top of each (discard) and carefully scoop out with a small spoon.
  • Make ranch dressing according to directions on package.
  • Mash potatoes with butter and enough ranch dressing
  • so potato mixture is still firm.
  • Mix in cheese.
  • Carefully put back into potato skins (mixture will pile out over top of potato).
  • You may freeze at this point, thaw and bake 30 minutes at 350° or bake right away for 20 to 30 minutes at 350°.
