Ingredients
- 4 large baking potatoes
- 1 c. shredded cheese
- 1/4 c. mayonnaise
- 1/4 c. milk
- 1 egg
- salt and pepper to taste
- green onion, chopped
- bacon bits
Method
- Bake potatoes. Slice lengthwise and scoop out all the pulp. Mix the pulp with cheese, mayonnaise, milk and egg; beat until smooth. Fill potato skins with mixture and top with chopped green onions, bacon bits and additional shredded cheese. Bake until hot and cheese melts.
