Ingredients

  • 2/3 cup (150 mL) fresh cranberries
  • 1/4 cup (50 mL) granulated sugar
  • Finely grated zest and juice of 1/2 orange
  • 1 tsp (5 mL) butter
  • 3 tbsp (45 mL) chopped onion
  • 1 cup (250 mL) finely chopped skinned roasted turkey
  • Salt and freshly ground black pepper to taste
  • 1 box (15 oz/425 g) frozen puff pastry, thawed

Method

  • Preheat oven to 400F (200C).
  • In a small saucepan, over medium-high heat, saute cranberries, sugar, orange zest and orange juice until berries pop.
  • Mash lightly with a fork.
  • Meanwhile, in a skillet, melt butter over medium heat.
  • Saute onion until tender.
  • Stir in cranberry mixture, turkey, salt and pepper; let cool.
  • Use the puff pastry sheets to form 8 turnovers, using the turkey mixture as filling.
  • Place on a baking sheet and bake for 20 to 25 minutes, or until browned and puffed.
