Ingredients

  • 1 Tbsp. oil
  • 1/2 chopped onion
  • 1 green pepper, cut in strips
  • 1 tomato, peeled and chopped
  • 2 cloves garlic, minced
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 (12 1/2 oz.) drained tuna
  • 6 medium zucchini
  • 1 (16 oz.) jar Italian sauce
  • 1 c. shredded Jack cheese
  • 1/2 c. grated Parmesan cheese

Method

  • In skillet, saute onion and green pepper until tender.
  • Add tomato, garlic, salt and pepper.
  • Cook 5 minutes, stirring constantly.
  • Add tuna and heat through. Cover zucchini with boiling salt water.
  • Boil 5 minutes.
  • Drain and rinse in cold water.
