Ingredients
- 1 Tbsp. oil
- 1/2 chopped onion
- 1 green pepper, cut in strips
- 1 tomato, peeled and chopped
- 2 cloves garlic, minced
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 (12 1/2 oz.) drained tuna
- 6 medium zucchini
- 1 (16 oz.) jar Italian sauce
- 1 c. shredded Jack cheese
- 1/2 c. grated Parmesan cheese
Method
- In skillet, saute onion and green pepper until tender.
- Add tomato, garlic, salt and pepper.
- Cook 5 minutes, stirring constantly.
- Add tuna and heat through. Cover zucchini with boiling salt water.
- Boil 5 minutes.
- Drain and rinse in cold water.
