Ingredients

  • 200 grams of canned tuna
  • 2 piece spring onions, chopped
  • 2 garlic cloves, minced
  • 1 tbsp chopped fresh parsley
  • 1 tbsp fresh lemon juice
  • 2 tbsp cornmeal
  • 6 tbsp ap flour
  • 1 egg
  • 1 tbsp mayonnaise
  • 1 salt and pepper to taste, i use 1 teaspoon for each

Method

  • Before using the tuna, leave it for 5 mins in a strainer.
  • Then in a bowl mix the tuna with the onion, garlic, lemon juice, parsley, salt and pepper.
  • Next add the cornmeal, flour, egg and mayo and mix well.
  • Heat the oil and drop spoonfuls of the tuna mix.
  • Let the patties cook until golden brown.
