Ingredients

  • 2 cans grated tuna fish
  • 2 c. mashed potatoes
  • 1/4 c. grated Parmesan cheese
  • 3 eggs, well beaten
  • 1 clove garlic, minced
  • 4 Tbsp. chopped parsley
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 c. bread crumbs
  • 1/2 c. oil

Method

  • Mash the tuna thoroughly; mix to a smooth paste with the potatoes, cheese, eggs, parsley, garlic and seasoning.
  • Shape into flat cakes about 1/2-inch thick and 2 inches in diameter.
  • Dip in the bread crumbs; saute in the hot oil until golden.
  • Serve hot or cold; hot with tomato sauce and cold with mayonnaise.
  • Serves 6.
