Ingredients
- 2 cans grated tuna fish
- 2 c. mashed potatoes
- 1/4 c. grated Parmesan cheese
- 3 eggs, well beaten
- 1 clove garlic, minced
- 4 Tbsp. chopped parsley
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 c. bread crumbs
- 1/2 c. oil
Method
- Mash the tuna thoroughly; mix to a smooth paste with the potatoes, cheese, eggs, parsley, garlic and seasoning.
- Shape into flat cakes about 1/2-inch thick and 2 inches in diameter.
- Dip in the bread crumbs; saute in the hot oil until golden.
- Serve hot or cold; hot with tomato sauce and cold with mayonnaise.
- Serves 6.
