Ingredients

  • 34 cup butter, softened
  • 34 cup brown sugar, firmly packed
  • 34 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 12 cups sweetened flaked coconut
  • 3 teaspoons grated lime rind
  • 2 tablespoons fresh lime juice
  • 2 12 cups all-purpose flour
  • 1 teaspoon baking soda
  • 12 teaspoon salt
  • 1 (12 ounce) package white chocolate chips
  • 12 cup chopped macadamia nuts

Method

  • Beat first 4 ingredients at medium speed with an electric mixer until creamy.
  • Add eggs,beating until blended.
  • Add coconut,lime rind,and lime juice,beating until blended.
  • Combine flour,baking soda and salt in a mixing bowl;gradually add to butter mixture,beating well.
  • Stir in white chocolate morsels and macadamia nuts.
  • Drop by rounded tablespoonfuls onto ungreased baking sheets.
  • Bake at 375 for 10-12 minutes or until lightly browned.
  • Cool on wire racks.
