- 3/4 c. self-rising flour
- 1/2 c. nonfat milk
- 1/4 c. nonfat egg substitute
- 3 Tbsp. corn oil margarine
- 1 (3.5 oz.) pkg. dry vanilla pudding mix (not instant)
- 1 (8 oz.) carton nonfat cream cheese (at room temperature)
- 1/2 c. plus 1 Tbsp. sugar, divided use
- 1 tsp. vanilla extract
- 1/2 tsp. coconut extract
- 1 (20 oz.) can crushed pineapple (packed in natural), well drained
Method
- Preheat the oven to 350°.
- Spray a 9 or 10-inch pie plate with a nonstick vegetable spray and set aside.
- In a large bowl, combine flour, milk, egg substitute, margarine and pudding mix. Using an electric mixer, beat for 2 minutes.
- Pour into the prepared pie plate.
