Ingredients

  • 3/4 c. self-rising flour
  • 1/2 c. nonfat milk
  • 1/4 c. nonfat egg substitute
  • 3 Tbsp. corn oil margarine
  • 1 (3.5 oz.) pkg. dry vanilla pudding mix (not instant)
  • 1 (8 oz.) carton nonfat cream cheese (at room temperature)
  • 1/2 c. plus 1 Tbsp. sugar, divided use
  • 1 tsp. vanilla extract
  • 1/2 tsp. coconut extract
  • 1 (20 oz.) can crushed pineapple (packed in natural), well drained

Method

  • Preheat the oven to 350°.
  • Spray a 9 or 10-inch pie plate with a nonstick vegetable spray and set aside.
  • In a large bowl, combine flour, milk, egg substitute, margarine and pudding mix. Using an electric mixer, beat for 2 minutes.
  • Pour into the prepared pie plate.
