Ingredients

  • 1 (32-ounce) bag tater tots
  • 1 cup chopped fresh cilantro, plus leaves for garnish
  • 1/4 cup sliced scallions
  • 1 (8-ounce) container sour cream
  • 1 pound ground beef chuck
  • 1 red onion, chopped
  • 1 (16-ounce) jar salsa
  • 2 cups shredded Mexican cheese blend
  • 1 (16-ounce) container guacamole

Method

  • Cook the tater tots according to the package's directions.
  • Transfer to a large platter.
  • Meanwhile, stir the cilantro and scallions into the sour cream in a serving bowl.
  • Heat the Timeless 12-inch cast iron pan over high heat until hot.
  • Add the beef and spread in an even layer.
  • Cook, stirring and breaking the meat into bits, until browned, about 7 minutes.
  • Lower the heat to medium-high.
  • Add the onion and cook, stirring occasionally, until crisp-tender, about 5 minutes.
  • Add 1 cup salsa and cook, stirring, until the liquid evaporates, about 5 minutes.
  • Remove from the heat and sprinkle the cheese on top.
  • Line up the tater tot platter, cast iron pan with the beef mixture, sour cream mixture, remaining salsa, and guacamole on the dinner table, buffet style.
