Ingredients

  • 2 lbs. fajitas
  • 6 corn tortillas
  • 2 c. refried beans
  • Lettuce minced
  • Tomatoes, diced
  • 2 c. cheddar cheese, grated
  • 2 avocados, sliced
  • Lowfat sour cream

Method

  • 1.
  • Prepare fajitas and chop.
  • Prepare tostadas shells, refried beans, lettuce, tomatoes, cheese and avocados.
  • Set aside.
  • 2.
  • Spread refried beans on fried tortillas, then cover plentifully with fajita meat.
  • Top with lettuce, tomatoes, cheese and avocados.
  • 3.
  • Garnish with a spoon of lowfat sour cream in the middle of the tostada.
  • 4.
  • Makes 4 to 6 servings.
