Ingredients
- 2 lbs. fajitas
- 6 corn tortillas
- 2 c. refried beans
- Lettuce minced
- Tomatoes, diced
- 2 c. cheddar cheese, grated
- 2 avocados, sliced
- Lowfat sour cream
Method
- 1.
- Prepare fajitas and chop.
- Prepare tostadas shells, refried beans, lettuce, tomatoes, cheese and avocados.
- Set aside.
- 2.
- Spread refried beans on fried tortillas, then cover plentifully with fajita meat.
- Top with lettuce, tomatoes, cheese and avocados.
- 3.
- Garnish with a spoon of lowfat sour cream in the middle of the tostada.
- 4.
- Makes 4 to 6 servings.
