- 1 med. onion
- 1 jalapeno pepper, minced
- 2 cloves garlic, chopped
- 2 tbsp. oil
- 2 lbs. stew meat, optional
- 1 (14 1/2 ounce.) can Rotel tomatoes and green chilies
- 1 (10 1/2 ounce.) can beef broth
- 1 (10 3/4 ounce.) can chicken broth
- 1/4 c. grated cheddar cheese
- 1 (10 3/4 ounce.) can tomato soup
- 1 1/2 cans water
- 1 teaspoon grnd cumin
- 1 teaspoon chili pwdr
- 1 teaspoon salt
- 2 teaspoon Worcestershire sauce
- 3 tbsp. Tabasco, optional
- 4 tortillas, cut in 1 inch squares
Method
- Saute/fry the first 5 ingredients in a large kettle.
- Add in remaining ingredients except tortillas and cheese, and simmer for 50 min.
- Add in tortillas and cook 10 min.
- Pour into mugs and sprinkle with cheese.
- Caution: you may want to go easy on the warm stuff!!
- Serves 6 to 8.
