Ingredients

  • 8 ounces, weight Tortellini (frozen Or Boxed)
  • 1 Tablespoon Olive Oil
  • 1 cup Chopped Onion
  • 2 whole Garlic Cloves, Minced
  • 1 whole Red Bell Pepper, chopped
  • 1 whole Green Bell Pepper, Chopped
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Salt
  • 1/2 teaspoons Pepper
  • 1 pound Lean Ground Beef
  • 3 cups Pasta Sauce - Fresh Or Jarred
  • 2 cups Grated Parmesan Cheese

Method

  • Cook tortellini according to package directions.
  • Then drain and set aside.
  • In a large skillet, saute onion and garlic in some olive oil over medium heat for a few minutes until softened.
  • Add chopped peppers and cook until they are slightly soft.
  • Add Italian seasoning and salt and pepper.
  • Remove to a plate and set aside.
  • Cook ground beef over medium heat until browned.
  • Drain grease, if necessary.
  • Add onion/pepper mixture to ground beef then stir in the pasta sauce and 1 cup Parmesan cheese.
  • Stir in cooked tortellini.
  • Pour into greased 9x13 casserole dish and top with remaining Parmesan cheese.
  • Bake at 350F for 20 25 minutes or until bubbly.
