Ingredients

  • 12 ounces ground pork
  • 4 slices of thick bacon, chopped into little pieces
  • 2 minced garlic cloves
  • 12 teaspoon pepper
  • 2 tablespoons olive oil
  • 19 ounces cheese tortellini
  • 2 small shallots, thinly slices
  • 2 (14 ounce) cans diced fire-roasted tomatoes
  • 2 cups spinach, torn
  • shaved parmesan cheese (optional)
  • 12 cup chicken broth

Method

  • Cook tortellini according to directions, set aside.
  • Combine pork, bacon, garlic & pepper.
  • Shape into 1" balls.
  • Brown until crisp and set aside.
  • Retain all grease for meatballs.
  • Cook shallots until tender.
  • Add meatballs, tomatoes, broth, tortellini & salt.
  • Cook until spinach wilted and well blended.
