Ingredients
- 3 oz. strawberry gelatin
- 2 c. tomato puree
- 1/2 c. sweet pickle relish
- 1 Tbsp. horseradish
Method
- Dissolve gelatin in 1 cup hot puree.
- Add remaining ingredients.
- Blend, electric mixer on high.
- Pour into 8 x 8-inch mold.
- Chill at least 4 hours, overnight if possible.
- Cut into 4-inch squares.
- Serve over leaf lettuce.
- Yield:
- 4 servings.
