Ingredients

  • 1/4 c. oil
  • 2 medium onions, chopped
  • 2 cloves garlic, minced
  • 2 lb. ground beef
  • 3 (No. 2) cans tomatoes
  • 1/2 c. water
  • 2 bay leaves
  • 1/2 c. chopped celery
  • 1/4 c. chopped parsley
  • 1 1/2 Tbsp. salt
  • 2 tsp. sugar
  • 1/4 tsp. pepper
  • 1 tsp. basil

Method

  • Heat oil in a large kettle or Dutch oven.
  • Add onions and garlic; saute 5 minutes.
  • Add the ground beef; cook until brown, breaking the meat up with a fork until it cooks.
  • Stir in the remaining ingredients.
  • Bring the mixture to a simmer, then cook over low heat until it is thick and rich, 45 minutes to an hour. Remove the bay leaves; skim off the fat.
  • This makes about 10 cups, plenty for 2 hearty family dishes.
  • It freezes well.
