Ingredients
- 4 tbsp oil
- 12 oz prawns, peeled
- 1 None lime, zested and juiced
- 1 1/2 lb ripe tomatoes, sliced
- 2 None nectarines, pitted and sliced
- 2 None onions, peeled and finely diced
- 3 oz lettuce, torn
- 1 bunch fresh chives, finely chopped
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 clove garlic, peeled and minced
Method
- Heat 2 tbsp oil in a large pan, add prawns and saute for 3-4 mins, stirring occasionally, until pink. Season then remove from heat and let cool.
- Whisk lime zest and juice and season. Add a pinch of sugar and whisk in remaining oil. Toss with tomatoes, nectarine, onion and lettuce and set aside for 10 mins. Add chives and prawns.
- Mix mayonnaise, sour cream and minced garlic and season. Serve with salad.
