Ingredients

  • 4 tbsp oil
  • 12 oz prawns, peeled
  • 1 None lime, zested and juiced
  • 1 1/2 lb ripe tomatoes, sliced
  • 2 None nectarines, pitted and sliced
  • 2 None onions, peeled and finely diced
  • 3 oz lettuce, torn
  • 1 bunch fresh chives, finely chopped
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 clove garlic, peeled and minced

Method

  • Heat 2 tbsp oil in a large pan, add prawns and saute for 3-4 mins, stirring occasionally, until pink. Season then remove from heat and let cool.
  • Whisk lime zest and juice and season. Add a pinch of sugar and whisk in remaining oil. Toss with tomatoes, nectarine, onion and lettuce and set aside for 10 mins. Add chives and prawns.
  • Mix mayonnaise, sour cream and minced garlic and season. Serve with salad.
