Ingredients

  • 1 vegetable bouillon cube
  • 1 c. rice
  • 1 small can peeled whole tomatoes
  • 1 small can crushed tomatoes
  • 3 Tbsp. butter
  • salt and pepper to taste
  • 2 medium size zucchini, sliced

Method

  • Boil rice in water as directed but add the bouillon cube so the rice will absorb the flavor.
  • Fry the zucchini in 1 tablespoon butter until slightly brown.
  • Combine the tomatoes in a separate pot and bring to a boil.
  • Add butter and salt and pepper.
  • Combine the zucchini and the tomato sauce.
  • Add the cooked rice and bring to a final boil.
  • Season with salt and pepper as desired and serve.
  • Serves 2 to 4.
  • This can be reheated using tomato juice to moisten.
