Ingredients
- 1 vegetable bouillon cube
- 1 c. rice
- 1 small can peeled whole tomatoes
- 1 small can crushed tomatoes
- 3 Tbsp. butter
- salt and pepper to taste
- 2 medium size zucchini, sliced
Method
- Boil rice in water as directed but add the bouillon cube so the rice will absorb the flavor.
- Fry the zucchini in 1 tablespoon butter until slightly brown.
- Combine the tomatoes in a separate pot and bring to a boil.
- Add butter and salt and pepper.
- Combine the zucchini and the tomato sauce.
- Add the cooked rice and bring to a final boil.
- Season with salt and pepper as desired and serve.
- Serves 2 to 4.
- This can be reheated using tomato juice to moisten.
