Ingredients

  • 1 medium shallot
  • 1 garlic clove
  • 1 cup chopped tomato
  • 4 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons lime juice
  • lime zest
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon marjoram
  • 1/4 cup fresh basil

Method

  • Blend all ingredients except basil into a blender or food processor until smooth.
  • Chiffonade the basil and stir in, to avoid brusing. Store chilled in an airtight container.
