Ingredients

  • 1/4 c. onion, chopped (optional)
  • 3 Tbsp. bacon drippings
  • 1 Tbsp. flour
  • 3 or 4 fresh tomatoes, peeled and chopped or 1 can tomatoes
  • 1 c. water
  • salt and pepper to taste

Method

  • Saute onion in bacon fat.
  • Add flour and brown.
  • Add tomatoes and their juices.
  • Stir as gravy thickens.
  • Add water, a little at a time, and cook longer until gravy is of desired consistency. Add salt and pepper to taste.
  • Serve over rice or biscuits.
  • This gravy is also good as a casserole sauce.
