Ingredients
- 4 apricot halves from a tin
- 2 tablespoons apricot juice
- 3 3/8 tablespoons tomato juice
- 3 3/8 tablespoons lemon juice
- 6 3/4 tablespoons sparkling water
Method
- Place the apricot halves and apricot juice in a blender and puree until smooth.
- Pour into a cocktail glass with ice, add tomato juice and lemon juice and top with sparkling water.
