Ingredients

  • 1/2 cup silken tofu
  • 2 tablespoons lemon juice
  • 6 slices toasted French bread
  • 1/2 cup diced avocado
  • 2 teaspoons extra-virgin olive oil

Method

  • Coarsely chop 1/2 cup silken tofu and season with about 2 tablespoons lemon juice, and salt and pepper to taste. Mound onto 6 slices toasted French bread, top with about 1/2 cup diced avocado and, if you like, chopped roasted red pepper. Drizzle with a total of 2 teaspoons extra-virgin olive oil and more lemon juice to taste.
