Ingredients

  • 1 lb ground hamburger
  • 1 15oz can roasted chopped tomatoes. (can use a 29oz can of tomato sauce in place of both cans of tomatoes)
  • 1 15oz can tomatoe sauce
  • 2 tsp chili powder. (season to taste)
  • 1 tsp garlic powder (season to taste)
  • 1 tsp onion powder (season to taste)
  • 3/4 tsp cumin (season to taste)
  • 1/2 tsp black pepper (season as taste)
  • 1 15oz can black olives. (i like using small ones)
  • 1/3 cup olive juice. (from can of olives)
  • 16 oz frozen corn
  • 1 box Jiffy cornbread mix
  • 1 egg
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese

Method

  • Brown hamburger over med-much heat until brown and done, drain grease,, Add tomatoes and tomatoes sauce and turn down to med,
  • Add l of the seasonings, olives and olive juice, and frozen corn, let cook for about 10min, taste and adjust if needed,
  • Heat oven to 400F, Grease an 8x8 or 11/2 qt cassarole dish, mix up the box of jiffy cornbread mix according to directions,
  • Add hamburger mixture to pan, then drop cornbread by spoonfuls over top of the hamburger mixture covering most of top,
  • sprinkle with shredded cheese, bake until cheese and corn bread are bubbly and golden brown
  • if someone does not like olives I leave them whole so they can remove them, it really does taste better with the olives juice in it
  • I make an extra box of cornbread to eat with on the side
  • serves 4--6
