Ingredients

  • 3 large potatoes peeled and cut into 1-inch cubes
  • 1 medium onions chopped
  • 3 tablespoons parmesan, parmigiano-reggiano cheese, grated
  • 1 tablespoon chives minced
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter
  • 4 ounces bacon cooked and crumbled bacon
  • 1/2 cup mozzarella cheese shredded
  • 1/2 cup cheddar cheese shredded

Method

  • Mix together the diced potatoes, onion, Parmesan cheese, chives, salt and black pepper together in a bowl.
  • Transfer to one or more packets of double sheets of greased aluminum foil.
  • Dot with butter and fold up the packet to seal well.
  • Grill over medium-heat or bake in a 400 degree F oven for about 30 to 40 minutes, turning once, until the potatoes are tender.
  • Open the foil packet (watch for steam) and sprinkle the shredded cheeses and crumbled bacon over the potatoes.
  • If needed return to the grill or oven to melt the cheese as desired.
  • Serve directly from the packet for easy cleanup.
