Ingredients
- 3 large potatoes peeled and cut into 1-inch cubes
- 1 medium onions chopped
- 3 tablespoons parmesan, parmigiano-reggiano cheese, grated
- 1 tablespoon chives minced
- 1/2 teaspoon seasoned salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter
- 4 ounces bacon cooked and crumbled bacon
- 1/2 cup mozzarella cheese shredded
- 1/2 cup cheddar cheese shredded
Method
- Mix together the diced potatoes, onion, Parmesan cheese, chives, salt and black pepper together in a bowl.
- Transfer to one or more packets of double sheets of greased aluminum foil.
- Dot with butter and fold up the packet to seal well.
- Grill over medium-heat or bake in a 400 degree F oven for about 30 to 40 minutes, turning once, until the potatoes are tender.
- Open the foil packet (watch for steam) and sprinkle the shredded cheeses and crumbled bacon over the potatoes.
- If needed return to the grill or oven to melt the cheese as desired.
- Serve directly from the packet for easy cleanup.
