Ingredients

  • 2 yeast cakes
  • 1/2 c. lukewarm water
  • 2 c. potato water (lukewarm)
  • 1/2 c. brown sugar
  • 4 tsp. salt
  • 1/4 c. oil
  • 1 Tbsp. soy lecithin
  • 1/2 c. applesauce
  • 1/4 c. uncooked oatmeal
  • 3 c. whole wheat flour
  • 3 c. unbleached white flour
  • 1/2 c. soy flour

Method

  • Dissolve yeast in lukewarm water.
  • Combine remaining ingredients and mix well with yeast.
  • Knead well.
  • Cover and let rise until double in bulk.
  • Punch down and let rise again.
  • Punch down and divide into 4 portions.
  • Place dough into 4 oiled loaf pans.
  • Let rise 3/4 hour.
  • Bake in a 350° oven for 1 hour.
