- 2 yeast cakes
- 1/2 c. lukewarm water
- 2 c. potato water (lukewarm)
- 1/2 c. brown sugar
- 4 tsp. salt
- 1/4 c. oil
- 1 Tbsp. soy lecithin
- 1/2 c. applesauce
- 1/4 c. uncooked oatmeal
- 3 c. whole wheat flour
- 3 c. unbleached white flour
- 1/2 c. soy flour
Method
- Dissolve yeast in lukewarm water.
- Combine remaining ingredients and mix well with yeast.
- Knead well.
- Cover and let rise until double in bulk.
- Punch down and let rise again.
- Punch down and divide into 4 portions.
- Place dough into 4 oiled loaf pans.
- Let rise 3/4 hour.
- Bake in a 350° oven for 1 hour.
