Ingredients

  • 1 pie crust baked
  • 3/4 cup semi sweet chocolate chips
  • 2 cups whole milk
  • 1 tablespoon vanilla
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 4 egg yolks
  • 1/2 teaspoon salt
  • 4 tablespoons butter softened
  • 3 bananas {ripe}
  • 3/4 cup toffee
  • 1 1/2 cups heavy cream
  • 1/2 cup powdered sugar

Method

  • Melt chocolate chips in 15 second increments until smooth. Spread into the bottom of your pie crust and allow to cool.
  • In a saucepan over medium heat, combine milk and vanilla, whisking for 3 minutes.
  • In a large mixing bowl, combine sugar, cornstarch, yolks and salt.
  • Gradually blend milk into your sugar mixture, careful not to curdle the egg.
  • Return mixture to saucepan and whisk continuously until thick {about 4 minutes}.
  • Whisk in butter. Remove from heat and fold in banana. Pour into pie crust.
  • Top with toffee crumbles, saving a little to garnish.
  • In a large mixing bowl, beat heavy cream until stiff. Gradually blend in powdered sugar and top pie. Chill 2 hours.
