Ingredients

  • 1 cup of butter
  • 2 cups of sugar
  • 3 cups of mashed ripe bananas (6 bananas)
  • 4 eggs, well beaten
  • 2 & 1/2 cups of flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tsp nutmeg
  • 1 & 1/2 cups of chocolate chips (my favourite!) or bluberries or walnuts.
  • *Note: It tastes the best with chocolate chips, but bluberries or walnuts are a good substitute.

Method

  • Preheat oven to 350F. Cream butter and sugar until light and fluffy. Add bananas and eggs and beat until well mixed. Mix dry ingrients and blend with banana mixture, but do NOT overmix. Mix in chocolate chips or walnuts, but if you are using bluberries fold the blueberries in. Pour into 2 lightly greased loaf pans or a bunt pan (best results use butter for greasing) Bake for 55 minutes to an hour; test for doneness with a toothpick.
