Ingredients

  • 8 ounce. spaghetti">linguine or possibly spaghetti
  • 1 pound pork sirloin cutlets, each 1/4 inch thick Or possibly
  • Pork chops boned and sliced 1/4 inch thick
  • 1/4 c. ketchup
  • 1/4 c. soy sauce
  • 3 med. size green onions, cut into 2 inch pcs
  • 1 tbsp. sugar
  • 1/2 teaspoon crushed red pepper
  • 1/4 teaspoon grnd ginger
  • 2 Large eggs
  • 1/4 teaspoon salt
  • Salad oil
  • 1 clove garlic, cut in half
  • 3/4 pound fresh bean sprouts Or possibly 1 (16 ounce.) can bean sprouts, liquid removed
  • 1/4 c. peanuts, finely minced

Method

  • Prepare linguine, keep hot (drain).
  • Cut pork at an angle into 1/8 inch slices.
  • Mix pork, ketchup, soy sauce, sugar, crushed red pepper and ginger, set aside.
  • Beat Large eggs with salt.
  • Heat 1 Tbsp.
  • oil in skillet, cook egg mix stirring till Large eggs are the size of peas.
  • Spoon Large eggs into large bowl.
  • In same skillet, heat 2 Tbsp.
  • oil, cook onions and garlic till garlic is golden brown.
  • Throw away garlic with slotted spoon, remove green onions to bowl with Large eggs.
  • In remaining oil in skillet over med-high heat, cook pork mix, stirring frequently, till pork loses its pink color.
  • Add in bean sprouts, cook till sprouts are slightly wilted.
  • Spoon pork mix into bowl with Large eggs, toss with linguine and sprinkle with minced nuts.
  • 8 serving.
