Ingredients
- 500g beef eye fillet, cooked medium rare and thinly sliced
- 150g oyster mushrooms, thinly sliced
- 200g snowpeas, trimmed and blanched
- 100g snowpea sprouts
- 1 red capsicum, seeded and thinly sliced
- 150g beansprouts
- 4 green onions (shallots), thinly sliced
- 1 fresh large red chilli, thinly sliced
- 3 tsp white wine vinegar
- 2 1/2 tbsp peanut oil
- 2 tbsp light soy sauce
- 1 tsp grated ginger
- 1/2 cup coriander leaves
Method
In a large bowl combine beef, mushrooms, snowpeas, snowpea sprouts, capsicum, beansprouts, green onions and chilli.
Combine white wine vinegar, peanut oil, soy sauce and ginger in a small bowl and whisk well, then pour dressing over salad and toss gently to combine.
