Ingredients

  • 1 big mango
  • 1 cup sticky rice (Thai or Japanese work good)
  • 1 cup coconut milk
  • 1/2 cup sugar
  • 1 tsp salt
  • 1 cup coconut milk
  • 1 Tbsp rice powder (if available)
  • 2 Tbsp sugar
  • pinch salt

Method

  • Wash & soak sticky rice in water for 3 hours.
  • Tightly wrap rice with a cloth and steam it for 30 minutes in a steamer.
  • In a small pan, add a cup of coconut mik, 1/2 cup sugar and 1 tsp salt and bring to a boil until sugar is melted.
  • Mix the boiled coconut milk into the rice.
  • To make the sauce: Add all the coconut sauce ingredients into a small pot and boil until thickened.
  • Cut the mango into smaller pieces.
  • Serve sticky rice along with the mango on a plate.
  • You can put the mango on top of the rice too.
  • Pour over the sauce as desired.
