Ingredients

  • 2 Tbsp. vegetable oil
  • 2 lb. stewing beef, cubed
  • 1 c. chopped onion
  • 1 green bell pepper
  • 1 garlic clove
  • 1 (12 oz.) can tomato paste
  • 2 1/2 c. water
  • 2 pickled jalapeno peppers
  • 1 1/2 Tbsp. chili powder
  • 1/2 tsp. crushed red pepper
  • 1/2 tsp. salt
  • 1/2 tsp. oregano
  • 1/2 tsp. cumin
  • 1 (15 1/2 oz.) can pinto beans, drained

Method

  • Heat oil and brown beef cubes.
  • Add onion, bell pepper and garlic.
  • Fry them with beef for about 5 minutes.
  • Add all the remaining ingredients except beans and simmer for 1 1/2 hours or until the meat is tender.
  • Add beans and simmer 30 minutes longer.
