- 2 Tbsp. vegetable oil
- 2 lb. stewing beef, cubed
- 1 c. chopped onion
- 1 green bell pepper
- 1 garlic clove
- 1 (12 oz.) can tomato paste
- 2 1/2 c. water
- 2 pickled jalapeno peppers
- 1 1/2 Tbsp. chili powder
- 1/2 tsp. crushed red pepper
- 1/2 tsp. salt
- 1/2 tsp. oregano
- 1/2 tsp. cumin
- 1 (15 1/2 oz.) can pinto beans, drained
Method
- Heat oil and brown beef cubes.
- Add onion, bell pepper and garlic.
- Fry them with beef for about 5 minutes.
- Add all the remaining ingredients except beans and simmer for 1 1/2 hours or until the meat is tender.
- Add beans and simmer 30 minutes longer.
