Ingredients

  • 3 Tbsp. shortening
  • 2 large onions, sliced
  • 2 green peppers, sliced
  • 1 lb. ground beef
  • 2 c. canned tomatoes
  • 1 c. cooked rice
  • 1 tsp. chili powder
  • 1 tsp. salt
  • dash of pepper

Method

  • Melt shortening in a skillet.
  • Saute the sliced onions and green peppers until tender.
  • Add ground beef; cook until there is no pink left in the meat, stirring with a fork to make it crumble. Add tomatoes, rice and seasoning.
  • Arrange in a 9-inch square baking dish; top with bread crumbs.
  • Brown slowly in a 350° oven for 20 to 30 minutes.
