- 2 eggs, separated
- 2 c. None Such mincemeat with brandy and rum
- 1 c. raisins
- 1 c. walnuts
- 1 c. sugar
- 1 tsp. vanilla
- 1/2 c. melted butter
- 2 c. sifted flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
Method
- Place egg whites in a small mixing bowl; beat until stiff. Set aside.
- Combine mincemeat, raisins, walnuts, sugar, vanilla, melted butter and egg yolks in a large bowl.
- Mix until well blended.
- Sift dry ingredients together.
- Fold dry ingredients into mincemeat mixture.
- Fold in egg whites.
- Pour into greased tube pan.
- Bake in a slow oven at 325° for 1 1/2 hours.
