Ingredients

  • 2 eggs, separated
  • 2 c. None Such mincemeat with brandy and rum
  • 1 c. raisins
  • 1 c. walnuts
  • 1 c. sugar
  • 1 tsp. vanilla
  • 1/2 c. melted butter
  • 2 c. sifted flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt

Method

  • Place egg whites in a small mixing bowl; beat until stiff. Set aside.
  • Combine mincemeat, raisins, walnuts, sugar, vanilla, melted butter and egg yolks in a large bowl.
  • Mix until well blended.
  • Sift dry ingredients together.
  • Fold dry ingredients into mincemeat mixture.
  • Fold in egg whites.
  • Pour into greased tube pan.
  • Bake in a slow oven at 325° for 1 1/2 hours.
