Ingredients

  • 1 pt. sour cream
  • 1 (4 oz.) can diced jalapenos
  • 4 c. cooked rice
  • 1/2 lb. Jack cheese
  • 1/4 lb. Cheddar cheese
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Method

  • Drain chiles.
  • Combine with sour cream, salt and pepper.
  • In a buttered casserole dish spread 1/3 of rice, layer with 1/2 of sour cream mixture and 1/2 of grated Jack cheese.
  • Repeat layers: rice, sour cream mix and Jack Cheese.
  • End with last 1/3 of rice.
  • Cover and bake at 350° for 45 minutes.
  • Top with grated Cheddar cheese and bake uncovered for 5 minutes more.
