Ingredients
- 1 pt. sour cream
- 1 (4 oz.) can diced jalapenos
- 4 c. cooked rice
- 1/2 lb. Jack cheese
- 1/4 lb. Cheddar cheese
- 1/2 tsp. salt
- 1/4 tsp. pepper
Method
- Drain chiles.
- Combine with sour cream, salt and pepper.
- In a buttered casserole dish spread 1/3 of rice, layer with 1/2 of sour cream mixture and 1/2 of grated Jack cheese.
- Repeat layers: rice, sour cream mix and Jack Cheese.
- End with last 1/3 of rice.
- Cover and bake at 350° for 45 minutes.
- Top with grated Cheddar cheese and bake uncovered for 5 minutes more.
